Sugar-Free Date & Banana Loaf

Ingredients: 


Dry ingredients:

  • 1 cup all purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup chia seeds

  • Whisk to combine.


Wet ingredients:

  • 20 dates, pitted and chopped

  • 1 tsp baking soda

  • 1/2 cup hot water


In a bowl, add the chopped dates, baking soda and hot water. Stir. Let it sit for 20-30 minutes till dates are soft. Once they are soft, place dates (and itโ€™s liquid) into the food processor and blitz to a chunky paste.


  • 4 bananas, mashed with a fork

  • 1/4 cup coconut oil

  • 1 egg


Add the above to a bowl and stir to combine.


Method:
1. Pre-heat oven to 180C.

2. Mix the wet and dry ingredients.
3. Pour into prepared loaf tins. Iโ€™ve lined two small loaf tins (8โ€ x 4โ€) with coconut oil and baking paper.
4. Slice two bananas lengthwise, top the batter with the sliced bananas - optional.
5. Bake for 50-60 minutes or till a toothpick inserted into the middle of the loaves, comes out clean.
