Sticky Date & Fig Pudding with Pistachio Ice Cream

Sunday sticky date and fig pudding fix with pistachio ice cream, chopped pistachio and crushed rose petals.


Ingredients: 

  • 15 Medjool dates, seed removed and roughly chopped

  • 4 dried figs, roughly chopped

  • 1 tsp baking soda

  • 1 cup hot water


In a pot, add the chopped dates, figs, hot water and baking soda. Bring it to a boil. Let it simmer gently for 5 minutes and then turn heat off. Mash.


Once date mixture is cool, add:

  • 1.5 tbsp of brown sugar

  • 2 tbsp of coconut oil

  • 1 egg

  • 3/4 cup ground almond / almond meal

  • 1 tsp baking powder


Whisk.


Line two small baking tins (I’m using 4 inch cake tins). Bake in a pre-heated oven (180C) for 20-25 mins.


Serve hot immediately with your favourite ice cream! Enjoys!
