Steak and Fried Potatoes in Onion Gravy

Ingredients: 

  • 2 tenderloin steaks, room temperature (seasoned with salt and pepper)

  • 4 medium sized potatoes, cut into wedges (seasoned with 1 tsp turmeric, 1 tsp chilli powder, salt and pepper)

  • 1 large onion, sliced

  • 1 tbsp all purpose flour

  • 1 - 1.5 cup water / stock

  • 1 tbsp dark soy sauce

  • 1 tbsp Worcestershire sauce

  • 1-2 tsp brown sugar

  • Salt and lotsa of freshly cracked black pepper

  • Enough oil to shallow fry the potatoes


Method:

1. In a pan, add oil and shallow fry the potatoes till golden brown. Set aside.
2. Using same pan (but removing excess oil), sear the steaks till medium rare (about 2 minutes each side). Set aside and let the steaks rest, covered. You don’t want to over cook them because you’ll be cooking them some more in the onion gravy.
3. To the steak dripping (the melted fat from cooking the steak), add the sliced onions and sauté till soft and caramelised. Add the flour and continue to cook for a minute or so. Time to add the water or stock. You’ll notice that the sauce will thicken. Add more liquid (1/2 cup or so), if needed. Season (to taste) with Worcestershire sauce, salt, loads of cracked pepper and brown sugar. Dark soy sauce is for color
4. While the sauce gently bubbles away, slice your steaks.
5. Return the fried potatoes and sliced steaks to the sauce. Let it simmer for about 2 minutes or so. Served immediately with rice.
