Spicy Zoodles

Ingredients:

  • 1 Zuchini, some made into Zoodles (Zucchini-noodles) and the rest chopped

  • 1/2 large onion, chopped

  • 50g stir fry mince (meat-free)

  • 1 tsp coarsely crushed black pepper

  • 1 tsp chilli powder

  • 1 tsp chilli flakes

  • 1 tsp rosemary garlic dried herbs

  • Chopped parsley

  • Olive oil for cooking

  • Salt

Garnish:

  • Mozzarella (in salt brine - this keeps it from drying out)

  • 4 cherry tomatoes, chopped

  • Extra virgin olive oil for dressing

Note: I don’t have a “spiralizer” so this is the best (and easiest) way to make these Zoodles.


Method: 
Make the spicy topping:
1. In a pan with olive oil, sauté the chopped onions and zucchini till soft. Add the meat-free mince. You want to cook it till it resembles a dry stir-fry. Add the course black pepper, chilli powder, chilli flakes and rosemary garlic herbs. Sauté and season with salt. Set aside.
2. In some boiling water, cook the Zoodles quickly (5-10 seconds) then drain it well. Use a clean kitchen towel (cloth) if needed to squeeze out any excess liquids. A sieve would work too. Do this so that you don’t end up with “watery” noodles. You could also have the Zoodles raw.

3. To serve, toss the hot Zoodles with the spicy topping, then top it with soft Mozzarella, chopped cherry tomatoes and a good drizzle of extra virgin olive oil.
