Pumpkin Curry

Ingredients:

  • 1/4 of a large pumpkin, cubed (about 2 cups)

  • 1 tsp cumin seeds

  • 1/2 tsp mustard seeds

  • 2 medium sized red onions, sliced thin

  • 2 sprigs curry leaves

  • 1 1/2 tbsp curry powder for vegetables

  • 1 tsp turmeric powder

  • 1 cup water

  • 1/3 cup coconut cream

  • 1-2 tsp garam masala

  • Salt to taste

  • 2-3 tbsp coconut oil for cooking


Method:
1. Start off by sautéing cumin seeds, mustard seeds, onions, curry leaves till onions are golden brown and soft. I like to add a pinch of salt while cooking the onions.
2. Once the onions are ready, add the curry powder and turmeric. Sauté till fragrant. Be careful to not let it burn.
3. Add pumpkin cubes and stir to combine. Add water (just enough to cover the pumpkin). Cover and allow it to cook till pumpkin is fork tender.
4. Once the pumpkin is cooked, add the coconut cream, garam masala and let it cook further, allowing flavours to come together; curry to thicken. Season to taste.
