Perfect Grilled Cheese Sandwich

Ingredients: 

  • Bread - honestly, any kind of bread will work. However, to achieve that crispy goodness on the outside but a melty-gooey inside, your sliced bread should be at least 1cm thick.

  • Cheese - you can do sliced square cheese, cheddar, grated mozzarella, or if you’re feeling fancy - Brie, Blue, Manchego.

  • Other fillings - using your creativity (or preference) - the sky’s the limit! Here are some favourite combos:

    • Brie, sliced figs / fig jam. With meat - add turkey ham / bacon.
    • Blue cheese, caramelised onions, honey, rockets / spinach. With meat - grilled chicken.
    • Mozzarella, pesto, grilled zucchini, onions and peppers.
    • Camembert, beetroot jam. With meat - leftover roast beef.
    • Manchego, slice onion, mint chutney, spinach. With meat - leftover roast lamb.


Method:

1. Start off by heating your pan.
2. Butter (generously) both sides of two slices of bread and place it on the pan.
3. Hear it sizzle away. Be sure to manage the heat because a smoking hot pan will give you burnt toast, a not so hot pan will give you soggy buttery bread. Two kinds of toast you DON’T want.
4. Pile your filling on one side of the toast - slices of cheese, mayonnaise and ham (if you like) then top it with the other slice.
5. Using a spatula, press the sandwich down till the cheese melts. You could also use a heavy plate / pot lid (heat proof!) to do this. Cook each side for at least 3-4 minutes till it’s crisp and golden brown.
