Paneer Patties

Prep and cooking time: 30 minutes
Makes 4 large / 6 medium sized patties.


Ingredients: 

  • 200g spiced paneer, grated

  • 1/2 large yellow onion, finely chopped

  • 1/2 cup panko bread crumbs

  • 1 egg

  • 1 tsp salt

  • 1 tsp crushed black pepper

  • 50g of butter


Method:
1. Start off by sautéing the chopped onion in 20g of butter and a pinch of salt. Cook onions till they are soft and brown. Set aside.
2. Add the grated spiced paneer to a large bowl, then add the sautéed onions, bread crumbs, egg, salt and pepper. Combine well, then form patties.
3. In a pan, add the rest of the butter and grill the paneer patties till golden brown.

To build your Paneer burger, you’ll need:

  • 1 burger bun, lightly toasted

  • 1 tbsp mayonnaise and 1/2 tbsp chilli sauce (I’m using Lingham’s) - mix to combine, use as much as you like

  • 1 tbsp of mashed avocado and tomato (recipe below)

  • Cucumber ribbons (use a potato peeler to form these thin ribbons / slice them up)


Recipe for mashed avocado and tomato:

  • 1 avocado

  • 1 small tomato, cubed small

  • 1 tbsp olive oil

  • Salt and pepper

  • 1 tbsp lemon / lime juice

In a bowl, place one half of the avocado and mash it with olive oil, salt, pepper and lemon / lime juice. Cube the other half of the avocado and tomato. Add that to the mashed avocado mixture and fold.
