No-Bake Red Kiwifruit Cheese Tart
When you’re hankering for a sweet treat, why not try this easy, healthy, no-bake cheese tart using only Jeju Red Kiwifruit as the sweetener for its filling and topping.
Ingredients for the crust:
15 digestive biscuits, finely crushed
100g unsalted butter, melted
Ingredients for the filling:
500g cream cheese, softened at room temperature
1/2 cup Jesmerize Jeju Red Kiwifruit purée (in a food processor, add peeled red kiwifruit, pulse till you have a smooth purée)
For the topping:
Fresh Jeju Red Kiwifruit slices
Method:
Make the crust:
1. In a large bowl, add the crushed biscuits and melted butter. Combine till the mixture resembles wet sand.
2. Grease the tart pan with some melted butter and add the crust mixture. Press the crust on the bottom and around the edges. Place the prepared crust in the fridge / freezer to chill while you make the filling.
Note: You can either make a large tart using a 10” tart pan (with a removable bottom) or like me, make two smaller ones (a 6” and 8” tart).
Make the filling:
3. In a stand mixer, mix the cream cheese till smooth. Add the Jeju Red Kiwifruit purée and mix to combine.
4. Add the filling to the prepared chilled crust. Smoothening the top before returning it to the fridge for at least 2-3 hours (or overnight if you have the time). Or like me, place it in the freezer for an hour so that I can have it with coffee later!
5. Serve the tart with more slices of Jeju Red Kiwifruit. Enjoy this luscious creamy, guilt-free dessert with your favourite tea, coffee or wine. 😉
