Meatballs in Tomato Sauce
Ingredients:
800g minced meat (beef / lamb / pork / chicken)
Basic seasoning:
3 tsp garlic powder
3 tsp paprika
1 tbsp crushed black pepper
1 cup bread crumbs
1/2 cup grated cheese (optional - but if using - cheddar, parmesan or feta)
1 tsp salt (also depending on the amount of cheese you use)
Extra seasoning options (use either one or a combination):
1-2 tsp dried herbs (rosemary, thyme, oregano, mixed Italian herbs)
1-2 tsp of spice heat e.g. cayenne, chilli flakes OR harissa
1 handful chopped coriander
1 large onion finely chopped (raw or sautéed - both give different flavours)
Tomato sauce:
1 large onion, finely sliced
400g canned chopped tomatoes
2-3 tsp dried herbs (if you’re using it in your meatballs, add less of this in the sauce)
1/2 cup milk / cooking cream
Water (as needed)
Salt and pepper
Olive oil
Method:
1. Make meatballs - mix minced meat with the basic seasoning. Roll them into equal sized balls.
2. Brown the meatballs in some olive oil. Set aside.
3. Make tomato sauce (watch reel). Simmer and season sauce before adding in the browned meatballs.
4. Gently simmer meatballs in sauce for 10-15 minutes.
5. Serve with extra grated cheese on top.
Best eaten with spaghetti or warm crusty bread to soak up all that meaty tomato sauce goodness.
