Masala-Spiced Burnt Cheesecake

This burnt cheesecake version has all the wonderful spice flavours from the ground Masala used. Sweet and creamy, this tastes a lot like an Indian dessert.


Ingredients: 

  • 100ml whipping cream

  • 1 tsp Masala Chai spice powder

  • 1 1/2 blocks of cream cheese (softened, room temperature) - about 375g

  • 1/2 cup caster sugar / fine sugar

  • 2 medium-sized eggs

  • 1 tbsp all purpose flour


For this arm workout, you’ll need a large bowl, whisk, 6” round cake pan, baking sheet.


Method: 
1. Pre-heat oven to 220C.
2. Start off by infusing the cream with the Masala Chai spice powder. In a pan, add the cream, spice powder and turn heat on. Let it simmer gently for about 2-3 minutes. Once that’s done, set aside and let it cool.
3. Next, in a large bowl, add the softened cream cheese and whisk. 

4. Add sugar and continue whisking till combined. 

5. Add one egg at a time, mix still smooth. Make sure to scrape the sides of the bowl. 

6. After this is done, add in the infused cream and the flour. Continue mixing till you have a creamy smooth batter.
7. Line the cake tin with two sheets of baking paper (like in the video). 

8. Pour in the batter, bake the cheesecake for about 40 - 50 minutes. You should have a burnt top (deep golden brown) and puffy jiggly centre.
