Masala Minced Chicken and Potatoes

Ingredients: 

  • 500g minced chicken

  • 2 medium-sized potatoes, cubed small

  • 2 sprigs, curry leaves

  • 1 onion, chopped

  • 1 tbsp finely chopped ginger

  • 1 green chilli, halved

  • Chopped coriander, a handful

  • 2-3 tbsp meat curry powder

  • 1 tsp garam masala

  • 1/2 cup of water (or less)

  • Salt to taste

  • 3-4 tbsp coconut oil

Using whole spices that’s available in my pantry:

  • 1 cinnamon stick

  • 2 cardamom pods

  • 1-2 tsp cumin seeds (this alone is just fine too)


Method:
1. Add coconut oil to a hot pan, then sauté the the whole spices, onions and curry leaves till fragrant and soft.
2. Next, add chopped ginger, green chilli and meat curry powder. Cook till it smells heavenly (toasted and not burnt).
3. Once that’s done, add the minced chicken. Mix to combine (be sure to break up the minced chicken chunks and coat them well with the toasted curry powder mixture). Season with salt and add the garam masala. Sauté for a few minutes before adding some water (this is just to help the potatoes cook faster). Cover and let it cook.
4. Check if you’ve added enough salt. This dry spiced minced chicken is ready when potatoes are fork tender. Oh! And a sprinkling of chopped coriander. 


Honestly, this dish just needs a plate of hot rice and your favourite stir-fried vegetable!
