Malaysian-Style Eggs with Sambal Hijau

There are days when you forget to just press record!! Tried a Sambal Hijau recipe using: 

  • green chillies

  • chilli padi (bird’s eye chilli)

  • onions

  • garlic

  • tomatoes (best to use green ones if you can find them). 


Method:

1. Boil the ingredients mentioned, in some water and a pinch of salt. Cook till the chillis aren’t bright green anymore (or aren’t raw looking).
2. This is the part I thought I recorded but didn’t - drain the water from the cooked ingredients and add it to your food processor. Blend till desired consistency.
3. To a clean pan, add oil (you need about half a cup or so) and cook the blended chilli paste till “pecah minyak” (when the oil splits from the paste). Season with salt and a bit of sugar (you need some to balance out the flavours). Done.

My eggs today are served Malaysian style with some air fried tempeh and potatoes (seasoned like my previous recipes), ulam raja, baby spinach, cucumbers, tomatoes and my homemade Sambal Hijau.
