Kangkung Salad

Ingredients: 

  • 1 handful of kangkung (water spinach), cleaned and rinsed

  • 1-2 tsp of your favourite jarred Sambal

  • A pinch of salt and pepper

  • 1 tbsp coconut oil

  • 1 tbsp of lemon / lime juice


  • 1 mini cucumber, cubed small

  • 5-6 cherry tomatoes, cubed small

  • 1 small red shallot, finely sliced

  • 2-3 tbsp crispy fried shallots

  • Spring onion, finely chopped


Method: 

1. In a pot, bring some water to a boil. Add salt. Blanch the kangkung for a minute. Drain and rinse the blanched kangkung in some cold water to stop the cooking process. You want the kangkung looking green and crunchy.
2. In a wide plate, make your Sambal dressing by adding the jarred Sambal, salt, pepper, coconut oil and a squeeze of lemon juice. Whisk.
3. Toss your cooked kangkung in the Sambal dressing. Coat well. Top with the rest of the chopped vegetables.
