Ikan Masak Kicap (Fish in Soy Sauce)

Ingredients: 

  • 4 slices of fish of your choice (I’m using Tenggiri / Mackerel)

  • 1-2 tsp Turmeric powder

  • 1/2 tsp salt

  • 1/2 tsp ground black pepper


To blend:

  • 1/2 large red onion

  • 3 cloves of garlic

  • 1 tsp ginger paste / 1-inch knob


Sauces:

  • 2 tbsp dark soy sauce

  • 2 tbsp light soy sauce

  • 2 tbsp tomato ketchup


  • 1/2 large red onion, sliced

  • 2-3 sprigs of Coriander (just leaves, chopped)


  • 1-2 tsp brown sugar (to taste and according to your preference)

  • 5-6 tbsp coconut oil


Method:
1. Start off by marinating the fish slices with turmeric powder, salt and pepper. Set aside.
2. In a food processor, add the onion, garlic, ginger and blend to a smooth paste.
3. In a bowl, add the dark soy sauce, light soy sauce, tomato ketchup and mix to combine.
4. Heat pan with the coconut oil and pan fry the marinated fish slices till golden brown. Remove and set aside.
5. In the same pan with the leftover oil, add the blended ingredients. Sauté till fragrant for about 2-3 minutes.
6. Next, add the sauces and some water (about half a cup). Let the sauce simmer for a minute. Add brown sugar and season to taste.
7. Return the fried fish to the sauce. Allow the fish to soak up the sauce. Add sliced onions and chopped coriander. Let it cook till onions become soft (about a minute or two).

Garnish with more coriander leaves. Serve with rice, a side of of your favourite stir-fried vegetable and a fried egg. Perfect.
