Honey Chicken

Ingredients: 

  • 4 whole chicken legs / your preferred chicken pieces

  • 1 tsp turmeric powder

  • 1 tsp cumin powder

  • 1 tsp crushed black pepper

  • 1 tsp salt

  • 1 tbsp coconut oil

Marinate the chicken with the ingredients above and set aside for 30 minutes.


Blended ingredients:

  • 2 medium sized red onions

  • 4 cloves of garlic

  • 1 knob ginger (about 2 inches)

  • 1 large tomato

  • In a food processor, blend to a fine paste. Set aside.


For the sauce:

  • 2 tbsp tomato sauce

  • 2 tbsp chilli sauce

  • 3 tbsp honey

  • In a bowl, give the sauces a quick mix to combine.


  • 4-5 tbsp of coconut oil for shallow frying the chicken.

  • About 1/2 cup of water

  • 1 large onion, sliced thin

  • 1 handful coriander leaves, roughly chopped


Method: 

1. Heat pan and add oil. Shallow fry the marinated chicken pieces till golden brown. (Note: Don’t worry if they aren’t fully cooked inside, braising them in the sauce later will allow the chicken to cook further)
2. Remove fried chicken and set aside. 

3. In the same pan, add the blended ingredients, a pinch of salt and sauté till fragrant. Allow the paste to cook for 2-3 minutes. Next, add the sauces and some water to make a gravy. Simmer gently for a minute and season to taste.
4. Return the fried chicken to the pan, coat it once with the sauce and cover to cook till chicken is moist and tender. Add sliced onions and chopped coriander.
