Easy Noodle Soup with Spicy Minced "Meat"

Ingredients: 

  • 150g plant-based minced meat

  • 2 small onions, thinly sliced

  • 2-3 tsp chilli powder

  • Salt and pepper

  • 2 cups water

  • 2 tsp plant-based stock powder (chicken style)

  • 1 noodle nest


Method: 

1. In a pan with oil, sauté the sliced onions till golden brown, then add the plant-based mince. Add the chilli powder and sauté till mince is evenly browned and caramelised. Season to taste.

2. Set spicy mince aside.

3. Using same pan, add two cups of water and bring to a simmer. Add the stock powder and noodle nest. Let the noodles cook. Turn heat off.

4. Serve hot with the spicy mince and all your favourite toppings. A good dollop of crispy chilli garlic would work too.
