Dry Chicken Curry
Dry Chicken Curry - made in 30 minutes!
Ingredients:
4 whole chicken legs, skin removed, cut into smaller pieces
1 tsp Greek yogurt
1-2 tsp meat curry powder
1 tsp turmeric powder
2 tsp ginger paste
3 medium red onions, finely sliced
1 medium red onion, finely sliced (added in the end when curry is cooked)
2-3 tbsp meat curry powder
1 tsp chilli powder
1-2 tsp garam masala
Salt to taste
Coconut oil for cooking
Method:
Marinate the chicken in Greek yoghurt, meat curry powder, turmeric powder and ginger paste. If you have time, keep it for 30 minutes or even overnight.
Saute the onions in some coconut oil. Add a pinch of salt as it will help to caramelise the onions.
Add marinated chicken and let it sear for a few minutes.
Add the curry powder, chilli powder and a bit more salt. Add a splash of water and mix through well.
Cover and let simmer until the chicken is cooked. Halfway through cooking, add the garam masala and stir through.
Open lid, add in the sliced onions and cook until the onions are soft. Give it a good stir before serving.
