Air-Fried Lady's Fingers / Okra in Yoghurt

Ingredients:

  • 5-8 lady’s finger, washed, dried and sliced thin

  • 1 tsp chilli flakes

  • 1 tsp turmeric powder

  • 1/4 tsp salt

  • 2 tbsp coconut oil


  • 2 tbsp yogurt / more

  • 1 small onion, chopped

  • 1 red chilli, chopped

  • 1 small bunch coriander leaves, chopped

  • Freshly cracked black pepper

  • A tiny pinch of salt to salt the yogurt (optional because I’ve added salt to the lady’s finger before air frying them)


  • Lemon juice (optional)


Method:

1. In a bowl, add the sliced lady’s finger, then marinate with chilli flakes, turmeric powder, salt and coconut oil. Give it a good mix.
2. Air fry till desired consistency - I air fried mine for 10 minutes at 180C. Go ahead and air fry it longer if you’d like it crispier.
3. In a shallow dish, add the yogurt, air fried lady’s finger, onion, chilli, coriander and black pepper. Mix well. Add a squeeze of lemon juice if you like.

This is a perfect side dish for your curries.
