Air-Fried Brinjal & Tempeh
Air-fried brinjal and tempeh coated in crispy chilli garlic.
Ingredients:
2 small long brinjal, cubed small
1/2 tsp turmeric powder
1/2 tsp garlic salt
Freshly cracked black pepper
2 tbsp coconut oil
200g tempeh, cubed small
1/2 tsp turmeric powder
1/2 tsp garlic salt
Freshly cracked black pepper
2 tbsp coconut oil
Method:
1. Air fry the brinjal and tempeh separately. They both have different cooking times.
2. I like to start off by cooking both (one at a time) at 180C for 5 minutes.
3. Then, I add about 3 minutes more (giving it a toss with a spoon each time) until I’m happy with the texture.
4. I end by cooking it at 200C for a minute or two. Do the same with the tempeh. Cook till desired texture.
5. Finally, toss the air-fried brinjal and tempeh (still hot) with 1 or 2 teaspoons of crispy chilli garlic.
