
Whole Wheat Chia Flatbread

How to make it
Ingredients:
1 cup whole wheat flour (and a little extra for kneading)
2 tbsp chia seeds
1/2 tsp salt
2 tbsp coconut oil
1/3 cup milk
Method:
1. In a bowl, add the flour, chia seeds, salt and whisk to combine. Then add the coconut oil and milk till it forms a dough. Add some flour if the dough is still sticky. The dough doesn’t need much kneading - just a few minutes till it becomes smooth.
2. Divide into two equal portions and roll it out on a lightly floured surface. Role it out as thin as possible.
3. Heat some coconut oil on a non-stick pan. Place the flatbread in the pan and let it cook till it puffs up, pressing it down gently. Flip and repeat the process.
Serving suggestion: make a wrap using store bought pesto as a base, then layer with baby spinach, chopped lettuce, sliced heart tomatoes, thinly sliced purple cabbage, onions, sliced olives and walnuts - basically anything you want! Carefully fold the wrap and enjoy!
