Turmeric Fried Chicken

How to make it 

Ingredients: 

  • 4 whole leg, cut into smaller pieces

  • 2 medium potatoes, cut into wedges

  • 1.5 tsp turmeric powder

  • 1 tsp chilli powder

  • 1 tbsp meat curry powder

  • 1 tsp cumin powder

  • 1 tsp salt

  • 1 tsp black pepper

  • Coconut oil


Method: 


1. In a large bowl, place chicken, potato wedges and the spices above. Mix well and set aside.

2. In a pan, heat enough oil to shallow fry the marinated chicken and potatoes. Once the chicken and potatoes are fried (about 

3. 20 minutes or so) remove from oil and set aside.

4. Leave enough oil to sauté the following:

  • 2 medium-sized onions, sliced into small wedges

  • 3-4 cloves of garlic, sliced

  • 2 green chillis, halved lengthwise

  • 6-8 long beans, cut into 3-inch segments

5. Start off by sautéing the garlic till fragrant, then add the rest (onions, long beans, chilli). Don’t overlook the veggies because you want them nice and crunchy (cook them for about a minute or so). Next, add the fried chicken and potatoes. Season with a good pinch of salt and give it a stir. Done!

6. Serve with rice, a fried egg and some spicy sambal.
