Simple Roast Chicken

How to make it
Ingredients:
6 chicken chop pieces / boneless whole leg
2 tbsp garlic powder
1 tbsp ground paprika
1 tbsp Italian herb
Salt & pepper
Method:
1. In a bowl, add all the ingredients to form a spice rub. Dust the chicken pieces with it, then generously drizzle with olive oil. Make sure the chicken pieces are coated evenly. Arrange the chicken on a baking tray. Roast in the oven at 200C for 30-45 mins or till golden brown.
2. As I was pressed for time today, I used canned mushroom soup for gravy (heated, then drizzled over the roast chicken).
3. Serve it up with purple sweet potato mash (two boiled purple sweet potatoes with 1/2 cup cream and 50g of salted butter), air fryer mushrooms and pan-grilled romaine lettuce (covered in shaved pepper cheese)
