Paneer and Fried Bitter Gourd Salad

Try These Too!

How to make it 

Inspired by my sister-in-law's fried bitter gourd salad (a Sri Lankan dish), for lunch today, I made a paneer and fried bitter gourd salad.

Ingredients: 

  • 1 block of paneer - cubed, seasoned with salt and pan-fried

  • 1 medium sized bitter gourd, sliced thinly - seasoned with turmeric powder and salt, fried till crisp and drained

  • 1/2 a cucumber, sliced thinly

  • 1 red onion, sliced thinly

  • 1 green chili, thinly sliced

  • Some chopped lettuce leaves


Method:
1. In a mixing bowl, add all the ingredients above, then add:

  • 1-2 tablespoon of white vinegar / apple cider vinegar

  • A pinch of salt

  • 1 tsp brown sugar
    (Add or adjust the seasoning and vinegar according to your taste)

2. Using your (washed and clean) hands, mix everything well.


If you’re not a bitter gourd fan (but why?), you could use eggplant instead.
