Pan-Seared Chicken with Brown Sauce and fluffy Mashed Potatoes

How to make it
Ingredients:
3 skinless chicken breast, flattened with a meat mallet
2-3 tbsp of Shaury’s Italian Spice Mix
2 tsp garlic powder
1 tbsp flour
1-2 cups water
Salt & Pepper
Olive oil
Method:
1. Season the flattened chicken breast with the Italian spice mix, garlic powder, salt and pepper. In a pan, heat some olive oil and sear the chicken till golden brown.
2. Remove the cooked chicken and set aside.
3. If there isn’t enough oil, add about 1-2 tbsp of olive oil then add the flour. Sauté the flour till it turns to a pale brown mixture and smells nutty (please make sure it doesn’t burn). Add water and let it simmer gently forming a thick brown sauce. Season to taste.
For the mashed potatoes:
2 russet potatoes, cubed
2-3 tbsp milk
Salt to taste
Method:
1. Boil potatoes in salted water till cooked. Mash. Add the milk and whisk till fluffy.
2. Serve this delicious chicken breast on some mash with loads of brown sauce.
