Oven-Baked Iberico Pork Chops

How to make it
Ingredients:
6 pork chops (bone-in)
1/2 cup tomato ketchup
2 tsp brown sugar
1 tbsp Worcestershire sauce
2 tsp garlic powder
Salt & pepper
Method:
1. Mix the ingredients above and coat the chops. Set aside till you’re ready to cook them. You could also leave them to marinate, overnight.
2. In a preheated oven of 200C, bake the chops for about 20-25 mins (turning them once halfway). Baste the chops with the roasting juices.
3. Once the chops are cooked, to finish, turn up the oven to 220C (broiler) and let the pork chops sizzle and caramelise. Baste with the roasting juices if necessary.
Creamy Blue Cheese Sauce
2 cups of cooking cream
2 tsp garlic salt
30g blue cheese
Freshly ground black pepper
1 tsp Worcestershire sauce
While waiting for the pork chops to cook, in a pot, heat the cream and add the ingredients above (crumble the blue cheese). Using a whisk, gently stir the sauce as it simmers. Cook till sauce is thickened and creamy.
