Minced Meat & Potato in Oyster Sauce

How to make it
One of the many comfort dishes I love to make for the kids. No-fuss meal that’s not only delicious but super quick to make:
600g minced chicken / pork / beef
1 large onion, finely sliced
5 cloves of garlic, finely chopped
1 large potato, cubed small
3-4 tbsp of oyster sauce
3-4 tbsp of dark soy sauce
1.5 cups water, room temperature
Thickening method: 1 tbsp all purpose flour / 1 tsp cornstarch
In a pan, add some oil and sauté the sliced onions till soft and translucent. Then add in the garlic, sauté till fragrant (about a minute). Add your minced meat. Continue sautéing till the meat has changed it’s colour (no more raw-looking meat). When this happens, add the potatoes followed by the oyster sauce and dark soy sauce. Give it a good stir.
Now, if you want a thicker sauce, there’s two ways of doing this:
Method one: Add 1 tbsp of all purpose flour to the minced meat-oyster sauce mixture. Sauté till flour is well incorporated. Then add one and a half cups of water. Simmer till potatoes are cooked; season to taste.
Method two: Add one and a half cups of water to the minced meat-oyster sauce mixture, and let it simmer till potatoes are cooked. To thicken sauce, in a small bowl, add 1 tsp of cornstarch and dilute it with 1-2 tsp of cold water. Stir it to form a runny paste and pour it into the simmering dish. The sauce should thicken instantly. Simmer a few more minutes; season to taste.
To season: adjust with more oyster sauce / salt if needed.
A plate full of hot rice and a jammy egg / crispy fried egg to go with this dish.
