Lamb Patties in Onion Gravy

How to make it
Ingredients:
Lamb patties:
500g minced lamb
2 sprigs Rosemary - leaves, finely chopped
1 tbsp garlic powder
1 tbsp sweet paprika
1/2 cup grated Parmesan
1/2 cup Italian bread crumbs
Salt & pepper
Onion gravy:
1 large onion, thinly sliced
1 sprig Rosemary leaves, left whole / roughly chopped
1 sprig parsley, chopped
A handful of chives, finely chopped
1 tbsp of all purpose flour
Some milk / water
Salt & pepper
Method:
1. Mix minced lamb with all the ingredients above. Make into patties. Cook the patties in some olive oil till golden brown.
2. Remove the cooked lamb patties and set them aside.
3. In the remaining oil, sauté the thinly sliced onion till soft. Add the flour and cook till it turns pale brown and smells a little nutty (this should take about 3-4 mins under low heat. Be sure to keep an eye on it and not let it burn).
4. Add 1 cup of water and stir well. Let it simmer to desired thickness. Add water / milk to thin the gravy if it becomes too thick. Add all the chopped fresh herbs (Rosemary, parsley, chives). Season to taste.
5. Return the lamb patties to the gravy. Let it soak up some of the onion gravy by allowing it simmer for about 1-2 mins.
6. Serve with buttered rice, pasta and a salad.
