Lamb Meatball and Spinach Curry

How to make it
Ingredients:
Meatball:
500g minced lamb
1 medium onion, finely chopped
2 tbsp turmeric powder
1 tbsp cumin powder
1 tbsp garlic powder
1/2 cup grated coconut, toasted
1/2 cup breadcrumbs
Salt & pepper to taste
Curry:
1 large onion
3 cloves of garlic
2 cm of ginger
1 large tomato, finely chopped
1 tsp cumin seeds
3 sprigs of curry leaves
2-3 tbsp meat curry powder
2 tsp chili powder (optional)
1/2 cup coconut cream
Frozen / fresh baby spinach
Olive oil
Salt & pepper to taste
Method:
1. To begin, place the meatball ingredients in a bowl, mix well and form into medium-sized balls. This recipe should give you about 20 meatballs. Shallow fry them in some olive oil till golden brown and set aside.
2. For the curry, put the onion, garlic and ginger in a food processor and blend till fine. Then, in a pan, heat some olive oil and sauté the cumin seeds, onion mixture and curry leaves till fragrant. Now, add the meat curry and chilli powder. Let it cook for a minute or so before adding in the chopped tomato, coconut cream and some water (add more or less water according to desired curry consistency). Let the curry simmer for a few minutes. Season to taste.
3. Add the cooked lamb meatballs, frozen spinach / baby spinach, give it a good stir and let it gently simmer for about 8-10 mins.
4. Serve the curry with some fresh raita, rice or your favourite roti.
