How to make it 

Ingredients: 

  • 1/2  onion, finely chopped

  • 1 green chilli, finely sliced

  • 1 tsp cumin seeds

  • 2 cups chopped spinach

  • Salt and pepper to taste

  • 2 eggs

  • 1 dollop Greek yogurt

  • Lebanese Za’atar spice

  • Chili garlic oil

  • Extra Virgin Olive Oil


Method: 


1. Start off by sautéing the cumin seeds, chopped onions and chili in some olive oil till soft and translucent. Add the spinach, salt and pepper. Cook till wilted.

2. Make two wells into the greens and break the eggs in there. Let it cook till the whites set. You could also cover the pan and let the eggs cook for about 5 minutes. Once the eggs are cooked, turn heat off.

3. To serve, add a dollop of yogurt, sprinkle generously with Za’atar and chili garlic oil. Drizzle with extra virgin olive oil.
