How to make it 

Ingredients: 

  • 4-5 small eggplants, cubed

  • 1 large onion, cubed

  • 3 cloves of garlic, peeled and left whole

  • Olive oil, salt and pepper

  • 2 tbsp lemon juice (freshly squeezed)

  • 1-2 tsp ground cumin / cumin seeds


Method: 


1. Place the cubed eggplants, onions and garlic on a roasting pan. Drizzle with olive oil, salt and pepper. Roast for 30 mins at 180C (or till eggplants are golden brown and soft).

2. In a food processor, add the cooked eggplant, onions, garlic, cumin, lemon juice and olive oil. Pulse till desired consistency (I like mine slightly chunky). Check for seasoning. Serve with a drizzle of extra virgin olive oil and a generous sprinkling of Za’atar.


Baba Ganoush is delicious with your favourite flatbread, pita chips or veggies!
