How to make it 

With three different lunch requests, I decided to mash everything together to please the crew at home - one wanted chicken, another wanted pasta and of course, there was a curry request too.

So here’s a Creamy Chicken Curry Pasta recipe to try one day 😅


Ingredients: 

  • 3 chicken chop / deboned whole leg, skin removed and cut into small strips / bite-size pieces

  • 1 tbsp curry powder

  • 1 tsp chilli powder

  • 1 tsp turmeric powder

  • 1 tsp garlic powder

  • 1 tsp crushed black pepper

  • 1 tsp salt

  • 2 tbsp coconut oil

  • 100ml cooking cream / whipping cream

  • 1/3 cup water

  • Pasta of your choice



Method: 


1. Place chicken pieces in a bowl, then add the curry powder, chilli powder, turmeric powder, garlic powder, salt and crushed black pepper. Coat the chicken well and set aside.

2. Start boiling the water for your pasta now. Cook pasta in salted boiling water till al dente.

3. In a deep pan, heat some coconut oil and brown the curry-marinated chicken pieces. Flip chicken to ensure all sides are browned evenly.

4. Add the cooking cream / whipping cream. Then a splash of water. Let the chicken simmer away (5 minutes or so) Check for seasoning.

5. Add cooked pasta and toss. Serve with grated Parmesan cheese and more freshly cracked black pepper.
