Banana Bread with Nutella

How to make it 

Dry ingredients:

  • 2 cups all purpose flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 tsp cinnamon powder

  • 3/4 cup brown sugar

Wet ingredients:

  • 2 cups mashed bananas (about 5-6 medium sized overripe bananas)

  • 2 tbsp chunky peanut butter (I’m using Skippy’s)

  • 1/3 cup coconut oil

  • 2 large eggs

  • 1 tsp vanilla extract

For the swirl:

  • 4 tbsp Nutella

Rectangular baking tin: 9inch x 5inch - greased with a tsp of coconut oil and lined with baking paper.

Method:
1. Preheat oven to 180C.
2. Place all the dry ingredients in a large bowl, whisk and set aside.
3. Place the wet ingredients in another bowl, mix and set aside.
4. Pour the wet ingredients into the dry ingredients. Fold the ingredients just until well incorporated. Do not over mix.
5. Pour the banana batter into the prepared baking tin. Spread the batter evenly. 

6. Using a clean spoon, spoon out 4 (heaping) tablespoons of Nutella. Place them on top of the batter (each dollop spaced out evenly. Or not). Using a metal chopstick or small knife, get creative and swirl the Nutella around the batter. Once you’re happy with the pattern, it goes into the oven.
7. Bake for about 45-55 minutes or till a toothpick inserted in the center of the loaf comes out clean when the bread is done.
