How to make it
My latest obsession - baked sweet potatoes topped with crispy sambal!
Sweet potato wrapped in foil, then baked in the oven for an hour at 180C. Switch oven off; leave it for another hour or so. Best for meal preps. Bake a few at a time, then store them, wrapped in foil in the fridge.
These were baked a couple of days back. To heat, split them into half, drizzle with olive oil and heat it in the air fryer for 2-3 mins at 200C. Just to get the skin nice and crisp.
On a bed of greens, add your favourite crispy sambal to it.
